Snapper (Pagrus auratus)

This species caught from May to September. Snapper has a tender white to pinkish flesh with a sweet, mild flavour. It can be cooked in practically every way, or alternatively served raw as sashimi.

Silver Warehou (Seriolella Punctata)

This species is caught all year round. Flesh white, firm texture. Suited to all methods of cooking. Silver Warehou has high fat content.

Barracouta (Thyrsites Atun)

The total yield is approximately 20,000 - 40,000 tonnes and caught almost all year round. The flesh is darkish, of medium moisture and medium to low fat content. Whitens on cooking.

Southern Blue Whiting (Micromesistius Australis)

This species caught from August to October. Flesh white, delicate texture, moist with low fat and flakes easily. Similar flesh to Hoki. The flesh is firmer than the flesh of the blue whiting from the northern hemisphere and is free from parasites.
